These disappeared so fast I almost didn't get a picture. . .
And that was all that was left. . .
2 large sweet potatoes or yams peeled and shredded
3 green onions, finely diced
fresh chopped rosemary, about 2 tsp
chili powder
sea salt
freshly ground black pepper
coconut oil
Combine shredded sweet potatoes or yams, green onions and spices to taste in a large bowl. Heat a large cast iron or stainless steel skillet over medium heat for 3-4 mins. Add about 2 tbs coconut oil and allow it to melt. Add the potato mixture and cook until it starts to brown well. Flip and shape into "patties" or rounds. They will want to break apart but will adhere better the longer they cook. You will find that they soak up the coconut oil rather quickly. Add more as needed and flip 1 - 2 more times, shaping into rounds as you flip with a spatula. Cook until nicely browned, approximately 15-20 mins.
I served with broiled pastured pork sausage. Hubby loved them and poured a little maple sytrup on them as they reminded him of pancakes. He doesn't even "like coconut oil" but in this case what he didn't know could only help him:)
