Cmon' now be honest most of us have had the awesome french fries at Burger Monger.  You know why they're so good and good for you?  Because of the fat they cook them in.  They use beef fat;  not soybean, canola, peanut or other toxic processed vegetable oils.  With the football season upon us and the cooler fall weather on the horizon make some of your fried favorites at home by rendering your own. . .

Start with some good leaf tallow (fat from around the kidney of a grass fed cow)

and melt it down, slowly.

Allow to cool.  Can be stored at room temperature, in the fridge or frozen for up to a year.

It's also excellent for frying fish.  Frying in moderation is not unhealthy--it's the fat you use.  https://realfoodforager.com/four-reasons-to-use-beef-tallow/
