Confetti Slaw

Simple yet sumptuous. Cool off your hot summer meals with this refreshing confetti slaw.  A great complement to any barbecued pork, beef, chicken or seafood.  


1 small head green cabbage, shredded
1 carrot, diced
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
2 stalks celery, thinly sliced
1/2 cucumber, peeled and chopped
1/3  Vidalia onion, thinly sliced

Dressing – Mango Vinaigrette

1/4 cup extra virgin olive oil
1/3 cup pureed mango
2 tablespoons freshly squeezed lemon juice


Combine all ingredients in a large bowl and toss with the mango vinaigrette.*

*Slaw is best if allowed to set in fridge one hour before serving.
